Barrels for balsamic vinegar in different woods (oak, cherry, mulberry, ash, acacia, juniper, casagno) and different capacities.

The barrels for balsamic vinegar are similar in size to caratello, less elongated shape, with a capacity usually from 10 liters to 75 liters. The barrels have a cut-out in the space of two generally square slats to facilitate the extension of the inspection and maintenance operations.

The opening of the bunghole and also essential to encourage the oxygenation of the PRODUCT in its annual evaporation. For permetere maturation PRODUCT the bung is kept open, covered only by a piece of Stofa raggioni for cleaning.

Even the air that slowly seeps through the fibers participates in the stages of ripeness and invechiamento of vinegar. The barrels are construite according to ABTC standards and are certified. Traditional woods

Oak: hard wood but easy to work, it guarantees stability and durability over time. It can be inserted in any position of the battery, even if it is easier to find it in small barrels, but only for the fact that other woods require to be positioned between the first barrels of the series. There are batteries made of oak barrels only.

Chestnut: wood which has always been widespread for the construction of barrels, by virtue of its diffusion, economy and workability. Rich in tannins, some suggest placing it at the beginning of the battery, even if there are no contraindications to any positioning in the series.

Mulberry: Fairly rare wood, being a protected species, but once very common due to the processing of the silkworm. With a low specific weight and a high porosity, it favors a decided exchange of oxygen with the outside, and therefore the processes of acetification. This, together with the modest hold over time, has always suggested its use for the first or second barrel of the series.

Juniper: single coniferous wood, also from seasoned releases the scents of essential oils. Especially in the first years of processing, these aromas are often strong and unwelcome, and therefore the product is most appreciated when the barrel already has a few years of processing. The type of plant almost never allows the construction of large capacity barrels. For these reasons – aromas and size of the barrel – it is almost always used “outside” the battery, as a container for small amounts of collection destined for a particular flavoring.

Recent woods

Cherry: porous and fragrant wood, it transmits delicate aromas to the product. It tends to move over time, not guaranteeing a great seal of the barrels. For these reasons it is often placed at the beginning of the battery.

Ash: wood quite porous and easy to work with few tannins. Best suited for central or smaller battery barrels.

Robinia: hard and compact wood, which guarantees a long life and hold of the barrels. Recommended especially for smaller barrels.
